Spiralised Courgette
Without the carbs
Spiralised vegetables have taken off in the past few years, as a good replacement for spaghetti. Simple and basic dishes can be created with many veggies.
Spiralised Courgette: Text
Ingredients:
1 Courgette (zucchini)
Pine Nuts
1 Aubergine
3 button mushrooms
Onion
Garlic Clove
1 green chilli
Tomato Tin
Method:
1) With a spiraliser machine, put the courgette. (If no spiraliser, grate with a peeler, has the same effect as tagliatelle).
​
2) Cut up the onion into small pieces, mushrooms into small bits, garlic clove as thinly as possible and the aubergine into cubes (or as near as does not have to be accurate).
​
3) In a pan, put two tablespoons of oil, place onions and the thinly cut bits of garlic. Cook onions until they go slightly brown.
​
4) Place aubergine and mushrooms in the pan, Add small amount of salt, pepper, chill, sliced ginger, dried basil and dried oregano.
​
5) Open a tin of tomatoes add ino the pan, then again add a pinch of salt, pepper, chill, sliced ginger, dried basil and dried oregano.
​
6) Put your spiralised courgette in, along with the pine nuts. Season again with small amounts of salt, pepper, chill, sliced ginger, dried basil and dried oregano.
​
7) Allow the dishe to sit and cook on a low heat for about 5-10 minutes.
