Mushroom Skewers

Meaty Mushrooms on a stick!

This recipe was something I made up and using the herbs and spices I had in the cupboard and I know what flavours go well with mushrooms. Mushrooms have that meaty textures and flavours that pair well with meat with work with any mushrooms like chestnut and portobello.

Mushroom Skewers: Text

Ingredients:


300g button mushrooms, halved

2 tbsp olive oil

1 ½ tsp paprika

1 ½ tsp cumin

1 tsp salt

1 tsp of dry thyme (use fresh if you have it)

A few drops of lemon juice


Method:


1) Toss all ingredients into a bowl and set aside for 30 minutes or so.

2)Once marinated, slide onto skewers and get charring and barbecue until edges are brown and crispy.


Serving suggestion: Enjoy in a wrapped in little gem lettuce and a drizzle of mint sauce.
