Instant Broccoli in Gravy Sauce

Instant brain creation!!

I had to use up a broccoli and I knew we were having jacket potato for dinner so I thought how can I make a topping with it. I instantly thought I can make a sauce and know that gravy goes well on any veg. I put this recipe together from the top of my head and it worked out brilliantly.
This recipe is healthy and the end result was not pleasing to the eye but it was definitely tasty. Also this turns out it’s vegan friendly, just leave cheese topping out or replace with vegan cheese.

Instant Broccoli in Gravy Sauce: Text

Ingredients:


1 large broccoli, cut up into bite sized pieces

1 ½ tbsp oil

1 large onion, finely chopped (1 red but it works)

1 garlic clove, grated

2 tbsp plain four

2 tbsp soy sauce

2 cups broccoli stock

1 tsp cumin powder

2 tsp black pepper

A scatter of dried mixed herbs


Method:


1) Boil water and place the broccoli with a pinch of salt.

2) In another pan sweat the onions in oil. Once soften add in the flour and stir through.

3) Check the broccoli, it should be just cooked through. Remove some water and strain the required stock in a measuring jug.

4) Add the stock into the pan and season with salt, pepper and cumin powder and soy sauce.

5) Raise the heat and bring the sauce to boil for about 5 to 7 minutes. Add in the broccoli and turn the heat down to simmer for a further 5 to 10 minutes so the water evaporates and sauce thickens. Scatter the dried mixed herbs and its done!
