Chaimisu

Tiramisu with a twist!

Unlike the original recipe this is a definite twist something I invented for those non coffee lovers, plus I had ingredients from the cheesecake to use up especially as they were diary products. I do not like food waste as long as I can help it I will find a way to use up ingredients.


So I thought about how I can pimp up the classic tiramisu and if it works well with coffee so I thought I will try it with tea but us Indians like our spiced tea so I thought to give the tea flavour I will infuse the tea with spices that make a good cup of chai.

Ingredients:


250g mascarpone cheese

12 tbsp extra thick double cream

2 to 4 tbsp caster sugar

A box of eggless cake rusks

2 small cinnamon barks

4 to 6 clove sticks

1 green cardamom pod

2tsp loose tea or 1 teabag

¾ mug water

Cinnamon powder for dusting


Method:


1) Begin with bringing the water to boil with the aromatics in it. Strain out in a shallow dish and allow to cool.

2) Meanwhile ,mix the mascarpone with 2 tablespoon of sugar to begin with, taste and add accordingly. Add in 4 tablespoon of double cream first and if too thick keep adding 2 tablespoon but do not exceed maximum amount to avoid it becoming too loose and runny as this won’t allow the mixture to set.

3) Once the tea is cooled, dip each cake rusk and line one layer into the serving dish of choice. Use as many biscuits as required for the each layer. On top of the biscuits spoon and spread half of the cream mixture, repeat this method one more time so there is are two layers.

4) Sprinkle the top layer with cinnamon powder and place the dish into the fridge to chill until serving or at least up to 3 hours.
